Ingredients:
- 1 Cup basmati rice: washed & soaked 20 minutes in cold water (250g)
- 1 chopped onion (150g)
- 2 garlic cloves crushed 6-7g
- 20g Crushed fresh ginger
- 0.5 cup mixed vegetables (carrots & peas 100g)
- 30g Soaked pine nuts
- 40g Soaked Cashew nuts
- 30g (2 tablespoons) Vegetable oil
- 0.5 cup soaked raisins (75g)
- Saffron soaked in rose water
- Salt, Pepper
- Garam Masala, Turmeric , Paprika, Nutmeg , Bay leaf, Cardamon , Cloves, Anacead

- I’m a pan toast the pine nuts & cashew nuts until golden then keep aside.
- I’m a pan heat some vegetable oil
- Add the chopped onions & stair
- Add the diced chili & stair
- Add the garlic & ginger paste & stair
- Once the mixture is soft add the soaked Loomi
- Add the vegetable mix & stair
- Add the all spices & stair
- Once soft & cooked stair in the drained rice
- Add the Looki water & the cup of water with the Maggie cube
- Bring to the boil then reduce heat to minimum & let it simmer
- Once water is fully absorbed make a small hole in the middle & add the saffron & rose water
- Turn the heat off and let the rice simmer for 10 minutes
- Stair gently & serve with salad or hot tomato sauce
