Ingredients:
- 150 g almond flour
- 2 tablespoon cocoa powder (unsweetened)
- 5 g baking soda
- 2 big eggs
- 2 medium bananas
- vanilla extract
- 1/2 cup canned coconut milk (can be replaced with milk cream or yogurt)
- 2-3 tablespoon coconut oil
- 1/2 cup dried cranberries (unsweetened)
- 20 g cashew nuts
- 70 g 85% dark chocolate

- mix in a bowl all the dry ingredients: cocoa powder, almond flour, baking soda
- mix all wet ingredients in a blender: coconut oil, coconut milk, bananas, the 2 egg yolk
- leave the cranberries in water for 30-60 min (drain the water before use)
- mix the wet ingredients with the dry ingredients and add the cranberries
- beat the egg white until it becomes a thick foam
- mix the egg whites foam with the rest of the ingredients (if necessary add a little water at the end)
- put the dough in the muffin tins (I got 15 small muffins)
- bake for 30-35 min at 180-200 C
- once done take the muffins out and let sit for 30-60 min
- when they cooled add small pieces of cashew on top, melt the chocolate on steam and poor on each muffin
