Ingredients:
- 3/4 cup of basmati rice (150g)
- 1 Big Onion cut in half and chopped (80 g)
- 1 Aubergine chopped into small cubes (400 g)
- 1 Green Chilli chopped into medium size pieces (45 g)
- 1 Green or Red Pepper chopped into medium size pieces (150g)
- 2 Medium size Tomatoes (246g)
- French chopped Ginger (30g)
- 4 big cloves of chopped Garlic (12g)
- Pinch of Salt
- Pinch of Black Pepper
- Pinch of Paprika
- Pinch of Turmeric
- Pinch Garam Masala (mixed spice)
- 1 Tablespoon Pomegranate Juice, or Lemon Juice
- 2 Tablespoons Olive Oil (28g)
- 1 Tablespoon Coconut Oil (20g)
- 1/2 Aniseed, 3 Gloves, 1 Bay Leaf, 3 Cardamom, 1 Cube of Chicken Stock (optional)
- 3/4 Big Cup of water

Basmati Rice Recipe (for 2 persons):
- Wash the rice thoroughly until water runs clear
- Soak rice in cold water for 15 – 20 Minutes
- Dilute in the 3/4 cub of water the chicken cube, or the Himalaya salt.
- Drain the rice well in a sieve
- In a deep pan heat the Coconut Oil
- Add: Bay Leaf, Cardamon, Cloves & Aniseed and fri for 1-2 min
- Stair in the rice with the above ingredients
- Add the turmeric and stir well
- Add the salty water and stir
- Cover the pan and reduce heat to minimum and let to simmer until the water is fully absorbed
- Preparation 15-20 min
- Switched of the heat
- After 5 Minutes gently stir the rice and cover again, let the rice simmer for another 5 minutes
Aubergine Stir Fry (for 2 persons):
- Sprinkle salt on the chopped aubergine and let the water drain (20 Minutes)
- Drain from water and dry in Kitchen Towel
- Heat the Olive Oil in a pan
- Add the Onion and stir
- Add the Garlic & Ginger and stir until the Onion is brown
- Add the Green Pepper and Chilli and stair
- Once the mix is soft add the aubergine
- Once the aubergine is cooked add the chopped Tomatoes
- Add the Salt, Pepper, Paprika, Garam Masala, Turmeric and stair
- Add the Pomegranate or Lemon Juice
- Cover and simmer for 10 Minutes stirring occasionally
